Loca Niru – Contemporary Innovative Fine Dining
Harmonising Japanese Sensibilities with French Techniques
Experience contemporary fine dining helmed by Chef Shusuke Kubota at Loca Niru, where the seasonal menu is a modern expression of innovation – a delicate balance of tradition and creativity.
At this modern Japanese French restaurant in Singapore, each course reflects artistry, passion, and respect for nature’s finest offerings.
From Idiom to Identity
The name ‘Loca Niru’ is derived from two Zen idioms.
‘Hakuba Roka ni Iru’ speaks of a white horse stepping into a field of white reeds, blending seamlessly – representing a perfect balance and coexistence in a beautiful space at that moment.
‘Hakucho Roka ni Iru’ references a white swan which descends into a field of white reeds, awakening the sleeping reeds with its feathers before it flies gracefully away, leaving a beautiful sight of swaying reeds – this expresses the beauty of correlation even if it may seem small.
Just as both idioms capture the spirit of harmony, Loca Niru is the embodiment of the serene, quiet values that inspired its name. It is here that Japanese fine dining is reimagined with subtlety, depth, and a reverence for tradition. Every detail, from the first pour to the final bite, is a reflection of a considered philosophy.
At the heart of Loca Niru is ‘Kotan’ こたん, a Japanese way of living and creating that honours quiet simplicity, contemplative peace, and refined subtlety. Kotan flows and breathes throughout Loca Niru. It is sensed in the most tangible details – the preserved wooden truss ceilings; the balance of natural wood with elegant brass; and the artworks that echo Japanese craftsmanship alongside the Teochew carvings and heritage details of the House of Tan Yeok Nee.
It is a manifestation of Chef Shu’s personal belief that ‘one must learn from the past to create the future’.
Loca Niru is a modern Japanese French restaurant that instils calm; inspires respect for nature; and celebrates storytelling. It beckons guests to be fully present; and to savour each fleeting moment.
